Softened butter was loaded into its top, and cold water poured into its base. This keeps the butter cold and safe from bacteria but still spreadable.

These butter crocks, usually holding 1⁄2 cup of butter, are on a comeback from a number of makers. They become a useful and decorative addition to tableware. The Butter Bell Crock imported by L. Tremain comes in dozens of designs. Some have a spreader knife in a slot on the side.

Crocks are available in cookware stores, on Amazon.com and at www.butterbell.com. They start at $21.
