Greeting to Bob Ferraris, who reads us in the Salt River newspaper on his farm near Paris, Missouri. Bob’s seeking some advice on a common question: Exactly what is citrus zest?

Zest is the tough skin of the fruit, but not the white pith underneath. The skin contains most of the strong oils that provide flavoring. The trick of zesting is to remove this skin without taking up the pith.

You could use a micro planer, paring knife or fine shredder for the job, or a zester tool. The zester neatly scrapes off the skin in a few seconds.
