  • Burrito Jonz should open in Herkimer soon, according to John Winter, who co-owns Burrito Jonz in Utica with his wife, Amy.

    The restaurant will open in the former Sprint store at the corner of North Main Street and Park Avenue in the village.

    The restaurant will open in the former Sprint store at the corner of North Main Street and Park Avenue in the village.
    Winter said Alex Dorantes, who owns the building, expects to finish up the painting by the end of the week. Winter will then be able to move in the equipment he has purchased for the restaurant. He noted the owner had to put his assets into other projects in the building while the Burrito Jonz financing was being worked out.
    “As of Monday, it’s 100 percent on me,” Winter said, adding he anticipates the opening will be “very, very soon.”
    The Winters have been working for about a year to open a Burrito Jonz in Herkimer. In May 2012, the Herkimer County Industrial Development Agency approved a $15,000 grant for Burrito Jonz. In January, the Herkimer village board approved a $15,000 loan from a revolving loan fund for the project, but specified the funds could be used for equipment only.
    Winter has said he plans to hire three full-time employees and six to 10 part-time employees.
    He has a five-year lease agreement with Dorantes.
    The subject of the restaurant came up at Tuesday’s village board meeting and it was noted the village is expecting the first payment from Winter on the loan.
    Burrito Jonz, at 470 French Rd., Utica, is described as a fast casual, Cali Mex styled restaurant. According to the restaurant’s website, there are plans to open a Burrito Jonz in Rome in 2014.
